Growing up, my brother and I were fortunate enough to have our Mom be able to stay home and raise us while our wonderful Dad was out working very hard to support his family. When we would get home from school, it was always the usual tasks: cartoons or play outside, snack before supper, homework, supper and watch a little more tv before going to bed.
There were many times when we would snack on a few chips or an ice cream sandwich before supper. But, on those "special occasions, we would have some of Mom's delicious home made chocolate chip cookies! I don't know what it is about chocolate chip cookies but seems like no matter how old you get or how many you eat throughout your life (or at one sitting), you just don't seem to get tired of chocolate chip cookies!!! There are 1000's of ways to make them and all of them are quite delicious :)
Over the years my Mom always used the same recipe and it wasn't until this last decade she came across a new recipe that slightly updated the old one and I'm here today to share it with You! Of coarse, I put a slight twist on my version but nevertheless; they are still an amazing treat that will make your taste buds jump for joy!
And just in time for the Holidays when everyone (or we'd like to think everyone) is in the "baking spirit"! So let me introduce you to my all time favorite "Mom's Delicious Chocolate Chip Cookies" recipe:
1/2 c. butter, softened
1/2 c. Virgin Coconut Oil, (if you don't have Coconut Oil, just use an extra 1/2 c. butter)
3/4 c. Brown Sugar, packed
1/4 c. Coconut Sugar, (if you don't have Coconut Sugar, just use plain white sugar)
1 (3.5 oz.) package of Instant French Vanilla Pudding mix
1 tsp. Vanilla Extract
1 tsp. Baking Soda
2 c. Semi-sweet Chocolate Chips
2 1/4 c. All-Purpose Flour
1. Preheat oven to 375 degrees.*
2. Cream together butter, coconut oil and sugar. Mix until the mixture is creamy and slightly fluffy.
3. Add pudding mix, eggs and vanilla. Mix some more.
4. Combine flour & baking soda, sift together if you'd like. Add this to the cream mixture & mix.
5. Fold in the chocolate chips. The batter will be thick and a little hard to stir but just use some muscle!
6. Drop the cookie dough on a cookie sheet by the teaspoon or however large you would like your
cookies to be.
7. Bake for 10 minutes or until cookies are slightly browned.*
8. Cool on baking rack. Store in an air tight container & enjoy!
This recipe makes approximately 35-40 cookies depending on what size you make them.
Ok, for the side notes:
I bake my cookies for 8 minutes at 365 degrees. I live in a higher elevation and have found that baking at this temp for 8 minutes makes the PERFECT cookie! They are soft and lightly browned on the bottom. So, please adjust your cooking times and temperatures for your location.
